Time-saving Instant Pot Weight Loss Recipes
The Instapot, or Instant Pot, is a version of a slow cooker that we’ve been loving here at Red Mountain Weight Loss®. This device helps cut down on cook time yet still yields delicious, healthy meals! It combines the power of an electric pressure cooker, slow cooker and rice maker all in one for a versatile kitchen tool that you can use every day.

Egg Roll in a Bowl
Ingredients:
- 16 oz ground turkey or any other approved meat you would like
- 3 cups shredded cabbage (red or green)
- 1/2 cup chicken broth
- 1 Tbsp liquid aminos
- 1 Tbsp garlic powder
- 1 Tbsp ground ginger
- Salt & pepper (to taste)
Directions:
- Turn instapot to sauté. Wait until it’s hot and then add meat. Add seasonings and liquid aminos and brown meat. I
- Once the meat is browned, turn Instant Pot off and add the 1/2 cup chicken broth. Add cabbage on top, but do not stir. Place lid on and turn knob to sealing position.
- Set Instant Pot on manual high pressure for 0 minutes. If you have a newer model Instant Pot, you select the pressure cook button instead for 0 minutes. This will allow the Instant Pot to seal and cook the cabbage just enough.
- When timer is up, perform a quick release. When pressure is released, open carefully and give everything a quick stir before serving.
Lemon Pepper Salmon
Ingredients:
- ¾ cup water
- A few sprigs of parsley, dill, tarragon and basil
- 16 oz salmon filet, skin on
- 1/2 lemon, thinly sliced
- 1 zucchini, julienned
- 1 red bell pepper julienned
- Salt & pepper (to taste)
Directions:
- Put water and herbs in the Instant Pot, then insert the steamer rack and make sure that the handles are extended up.
- Place salmon skin down on rack.
- Season salmon with salt and pepper and cover with lemon slices.
- Close the Instant Pot and make sure vent is turned to “Sealing”. Plug it in, press “Steam” and press the + or – buttons to set it to 3 minutes. While salmon cooks, julienne your veggies.
- When the time is up, quick release the pressure, being careful to stay out of the way of the steam that will come out. Press the “Warm/Cancel” button. Remove lid, and using hot pads, carefully remove rack with salmon and set on a plate.
- Remove herbs and discard. Add veggies and put the lid back on. Press “Sauté” and let the veggies cook for just 1 or 2 minutes.
- Serve veggies with salmon and pour a little of the sauce over them if desired. Enjoy!
Italian-Style Beef
Ingredients:
- 16 oz lean beef
- 4 oz sliced pepperoncini peppers
- ¼ onion, thinly sliced
- ¼ cup broth of choice
- 1 garlic clove, minced
- 1 tsp onion powder
- 1 tsp garlic salt
- 1 tsp oregano
- 1 tsp basil
- 1 tsp parsley
- Salt & pepper (to taste)
Directions:
- Set Instant Pot to sauté & spray bottom with a little zero-calorie nonstick cooking spray.
- Add meat to pot and brown on both sides for 5-6 minutes.
- Add pepperoncini peppers, and a splash of the juice. Then, add the onion, broth, garlic and seasonings to the pot.
- Close lid, turn valve to sealing, and set to 70 minutes on Manual (High).
- After cook time is finished, let natural release for about 15 minutes, then release the rest of pressure and shred the meat. Serve warm beside your favorite vegetable.
Soft Cinnamon Apples
Ingredients:
- 6 apples (your variety of choice)
- 1 cup water
- ½ cup Splenda®
- 2 Tbsp cinnamon
Directions:
- Wash and core your apples, then place up to 6 apples in your Instant Pot. Pour water over them. Sprinkle apples with Splenda® and cinnamon.
- When done preparing, lock your lid in place and cook for 8 minutes. Once done cooking, release the pressure manually.
- Serve in a warm bowl with a little bit of the cooking liquid for a sweet, healthy treat!
