Strawberry-Apple Coleslaw


  • 1 head green cabbage, shredded or sliced thin
  • 2 medium-sized apples, peeled, cored, and julienned
  • 6 large strawberries, sliced
  • 3 Tbsp fresh mint, finely chopped
  • 2 Tbsp lemon or lime juice
  • 2 Tbsp apple cider vinegar
  • Salt & pepper (to taste)


  1. Combine shredded cabbage, julienned apples & fresh mint in a bowl.
  2. In a separate bowl, combine strawberries, lime juice, apple cider vinegar, salt & pepper.
  3. Blend for 1 minute to create the vinaigrette. Taste & add Splenda® for added sweetness if desired.
  4. Pour vinaigrette atop cabbage, apple & strawberry mixture. Chill and enjoy!
