Cucumber Orange Salad

Ingredients:

  • 1 Cucumber, sliced
  • Orange Juice (from 3 segments)
  • 1 tsp Apple Cider Vinegar
  • 1 tsp Red Onion, minced
  • Stevia (to taste)
  • 1 Orange, sliced
  • 1 tbsp Lemon Juice
  • 1 tsp Fresh Tarragon, minced
  • Salt & Pepper to taste
  • Fresh Mint Leaves, chopped (optional)

Directions:

  1. Combine apple cider vinegar, Stevia, onion, and spices. Mix well.
  2. Add tarragon, salt and pepper, cucumber and orange slices.
  3. Let marinate for 30 minutes. Garnish with fresh mint leaves.
