Creamy Cucumber-Radish Salad

Ingredients

  • 2 medium cucumbers
  • 6-7 radishes
  • 1 bunch scallions
  • 1 cup low-fat cottage cheese
  • Salt and pepper to taste

Directions:

  1. Prepare the cucumbers by peeling, halving, and seeding.
  2. Wash and slice the radishes.
  3. Chop the scallions.
  4. Place all ingredients into a medium bowl and sprinkle with salt and pepper. Stir together & enjoy!
