Chocolate-Mint Mousse

Ingredients:

  • 1 serving Thick & Rich Chocolate Protein Shake*
  • ½ cup of water
  • 1 tsp gelatin
  • 1 Tbsp Swerve® Confectioner’s Sugar Substitute (or more to taste)
  • ½ tsp sugar-free mint flavoring

Directions:

  1. In a medium saucepan over medium heat, bring water to a boil.
  2. Whisk in the gelatin until dissolved and then remove from heat. Let cool for 15 minutes.
  3. Prepare the Thick & Rich Chocolate Protein Shake, but only use between 4-6 oz of water. Allow to sit.
  4. Scoop the thick foam from the prepared shake mixture and put into large bowl. Beat this with sweetener and your choice of sugar-free mint flavoring.
  5. Beat mixture on low until combined. Spoon or pour into 4 small dessert cups and refrigerate until firm (for about one hour).
  6. Garnish with fresh mint & enjoy.
