Ingredients:
- 18 oz. liquid egg whites
- 1/2 cup fresh spinach, chopped
- 1/2 cup Roma tomato, diced
- 1/4 cup onion, diced
- Salt and pepper, to taste
- Zero-calorie nonstick cooking spray
Directions:
- Preheat the air fryer to 320°F.
- Spray a 7-inch round baking dish with zero-calorie nonstick cooking spray.
- In a large bowl, whisk egg whites until frothy. Add in spinach, tomatoes, onion, salt, and pepper. Stir until combined.
- Pour the egg mixture into the prepared dish.
- Place in the air fryer basket and cook for 20 minutes until the center is set.
Helpful Hint: Your cooking time may vary based on the size pan you use. A shallower pan will have a reduced cooking time.
Recipe Yields: 6 oz. of protein and 3/4 cup of vegetables
Serving Size: 1/3 of frittata equals 2 oz. of protein and 1/4 cup of vegetables
