Ingredients
Cabbage Cups
- 8 oz. lean beef
- 1 head of cabbage (about 8 cups)
- 1 pickled onion
- Walden Farms® Thousand Island Dressing, to taste
Pickled Onion Ingredients
- ½ cup apple cider vinegar
- 1 red onion, thinly sliced (1 cup)
- 1 cup water
- 1 ½ tsp kosher salt
- ½ tsp Stevia
Instructions

Combine water and apple cider in a bowl. Whisk in salt and Stevia until dissolved.

Place the sliced onion in a jar. Pour in the vinegar mixture and let it sit at room temperature for 1 hour or longer.

Cut away the core from the head of the cabbage and separate it into cups.

Preheat a nonstick skillet on high. Add beef and break it up with a spatula or wooden spoon. Cook until it’s heated through and starting to brown.

Fill each cabbage with beef. Top with pickled onions and Walden Farms dressing.
