Reuben Cabbage Cups

 

Reuben Cabbage Cups – RM3® & GLP Elite™

Ingredients

  

Cabbage Cups

  • 8 oz. lean beef
  • 1 head of cabbage (about 8 cups)
  • 1 pickled onion
  • Walden Farms® Thousand Island Dressing, to taste

Pickled Onion Ingredients

  • ½ cup apple cider vinegar
  • 1 red onion, thinly sliced (1 cup)
  • 1 cup water
  • 1 ½ tsp kosher salt
  • ½ tsp Stevia

Instructions

 

  • Combine water and apple cider in a bowl. Whisk in salt and Stevia until dissolved.
  • Place the sliced onion in a jar. Pour in the vinegar mixture and let it sit at room temperature for 1 hour or longer.
  • Cut away the core from the head of the cabbage and separate it into cups.
  • Preheat a nonstick skillet on high. Add beef and break it up with a spatula or wooden spoon. Cook until it’s heated through and starting to brown.
  • Fill each cabbage with beef. Top with pickled onions and Walden Farms dressing.
