Pumpkin Spiced Caramel Apples


  • 1 apple (red, peeled and sliced into chunks
  • 2 tsp Swerve Ultimate Sugar Replacement (Brown Sugar)
  • 1/2 tsp pumpkin pie spice
  • Walden Farms Caramel Sauce


  1. Preheat pan on low-medium heat and spray with zero calorie non-stick cooking spray.
  2. Add apples, Swerve brown sugar, and sprinkle with pumpkin pie spice.
  3. Simmer and stir constantly until apples ares soft and the sugar dissipates.
  4. Remove from heat and place in small bowls, top with Caramel Sauce and extra pumpkin pie spice.

Can you think of the more luscious dessert for the fall, than caramelized apple chunks, sprinkled with pumpkin spice and drizzled with caramel sauce? Well, let me make it even more tempting. This recipe is as guilty as you can get. In fact, the only calories consumed here are from one apple. Now that’s clean eating the Red Mountain way.

Pumpkin spice caramel apples, not only delicious, but one of the quickest and easiest recipes you’ll ever make. Here’s all you need: One Apple per serving, I’m using a crisp red organic Pink Lady. To sweeten this dish, add zero-calorie zero-carb Swerve brown sugar, some pumpkin pie spice and for the drizzle fat free sugar free and calorie free Walden Farms Caramel Sauce. So, let’s get cooking.

Grab your apple and peel off the skin. This crunchy variety is going to be perfect for this dish. Then core the center and cut into smaller chunks. Now, I like taking a fresh lemon and squeezing a little bit over the apple that keeps it from turning brown and it adds the perfect little zing to complement the sweetness. You’ll also need to heaping teaspoons of the swerve brown sugar, a half a teaspoon of pumpkin pie spice and I’d like to add just a pinch of salt to the apples to bring out the flavors. Let’s head to the skillet. Spray the pan was zero calorie cooking spray, turn up the heat and then add your Apple chunks, brown sugar, pumpkin pie spice and that pinch of salt. Then just let all of the goodness simmer.

Of course, you know apples are so good for you. They’re rich in vitamin C. They’re linked to a lower risk of many major diseases like diabetes and cancer. And because they’re high in fiber and water, they’re a great diet food because there’s some filling. Now you’ll stir the apples often and cook until they’re soft but not mushy. And that’s about it. I think this dish is perfect for a fall dessert as well as a side dish for chicken or lean pork tenderloin. So once the apples are done, just spoon them into the dish. Sprinkle with a hint of pumpkin pie spice and the finishing touch is a drizzle of the Walden Farms Caramel sauce, again no added calories.
