Cauliflower Tabbouleh

Cauliflower Tabbouleh


  • 1 head cauliflower
  • 1/2 sweet onion
  • 1 cup sliced grape tomatoes
  • 1/4 cup lemon juice
  • 1/4 cup chopped mint
  • 1/2 cup chopped parsley
  • 1 tsp salt
  • 1/4 tsp black pepper


  1. Start by chopping up the cauliflower and dicing the onion.
  2. Dump them both into a food processor and pulse until very fine.
  3. Add in the sliced tomatoes and lemon juice. Toss to coat.
  4. Add in your mint, parsley, salt and pepper. Enjoy! Add extra vegetables such as bell peppers, cucumber or green beans if desired.
