Baked Fennel

Ingredients:

  • 1 fennel bulb, chopped
  • 2 Tbsp fresh lemon juice
  • 1 tsp fresh tarragon, chopped
  • 1/2 tsp fresh ground black pepper
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 400 degrees.
  2. Combine all ingredients in a bowl. Pour into baking dish and cook for 15-20 minutes.

Note: add in 1 chopped apple prior to baking for an added tart taste!
