Italian-Inspired Turkey

Ingredients:

  • 1 lb ground turkey
  • Mushrooms, sliced
  • Eggplant, steamed
  • 1 Tbsp parsley
  • 1 Tbsp basil
  • Tomato sauce

Directions:

Begin by cooking ground turkey in a pan sprayed with a little zero-calorie nonstick cooking spray. Then, add sliced mushrooms and steamed eggplant & cook until turkey is browned. Season with parsley & basil, then add tomato sauce. Allow Turkey mixture to bubble, then reduce heat to low and allow to simmer. Serve hot.


Asian-Inspired Turkey

Ingredients:

  • 1 lb lean ground turkey
  • Walden Farms Asian Dressing
  • Liquid aminos
  • Bean sprouts

Directions:

In a bowl, combine ground turkey,  liquid aminos and zero-calorie Asian dressing. Mix well, then cook in a pan on medium-high heat until browned. Add bean sprouts & enjoy hot.


Mexican-Inspired Turkey

Ingredients:

  • 1 lb ground turkey
  • Diced onion
  • Minced garlic
  • Chopped celery
  • Paprika
  • Chili powder
  • Cumin
  • Green chilis, diced
  • Red & green peppers
  • Tomato sauce

Directions:

In a bowl, combine ground turkey,  with spices and tomato sauce. Mix well, then cook in a pan on medium-high heat until browned.


Turkey Meatloaf

Ingredients:

  • 1 lb ground turkey
  • 2 egg whites
  • Diced onion
  • Minced garlic
  • Chopped celery
  • all-purpose seasoning
  • liquid aminos
  • Walden Farms Honey Balsamic dressing
  • Hot Sauce
  • Walden Farms ketchup

Directions:

Combine ground turkey, 2 egg whites, the onion, garlic and celery mixture, all-purpose seasoning, salt and pepper, zero calorie ketchup, and liquid aminos. For a tasty meat loaf coating, combine the ketchup, liquid aminos, zero calorie Honey Balsamic dressing, hot sauce, and salt and pepper. Place turkey mixture into a pan & brush the sauce on top. Bake for one hour at 350 degrees and serve hot.

It’s meal prep day in the Red Mountain kitchen, so let’s take ground turkey and see how we can make a week’s worth of delicious, nutritious meals with all of these healthy ingredients.

Hi, it’s Jan D’Atri and this is Clean Eating the Red Mountain Way.

So where to begin?

Easy — chopped onion, minced garlic and diced celery. This medley, when sautéed with zero calorie cooking spray and a little water or chicken broth, will give Turkey the flavor it deserves.

For an Italian-inspired turkey meal, I’m adding sliced mushrooms and steamed eggplant. This mixture gives Turkey a delicious base. Start with a pound of ground turkey, cook until browned, add a tablespoon fresh parsley and a tablespoon of fresh basil, then some organic tomato sauce. And wow, this is gonna be one delicious meal.

For an Asian-inspired dish, it’s ground turkey, some liquid aminos and zero calorie Asian dressing. And we will add some healthy bean sprouts — in fact, they have one of the highest nutritional contents of any food, and they give an Asian dish that authentic touch.

I gotta have a Mexican meal! Starting with the onion, garlic and celery mixture, ground turkey, spices like smoked paprika, chili powder, and cumin, green chilis (diced), red and green peppers, some organic tomato sauce, and done! Delicioso.

Let’s switch things up with a meatloaf! Ground turkey, 2 egg whites, the onion, garlic and celery mixture, all-purpose seasoning, salt and pepper, and a little zero calorie ketchup and some liquid amino for flavor. For a really tasty meat loaf coating, I’m combining the ketchup, liquid amino, zero calorie Honey Balsamic for tang, hot sauce a kick, and salt and pepper. Give it a whisk and brush it on. Bake for one hour and… Oh my, the ultimate comfort food, and is healthy and diet-friendly as you can get.

Now for the sides: steamed spaghetti squash, zoodles, coleslaw, and of course, zero calorie miracle rice that cooks up in minutes, and we’re almost there! Add Red Mountain approved fruits like berries and cuties, and greens, and we’re ready to assemble!

  • Spaghetti squash, Italian turkey, sauce, fresh fennel and salad with zero calorie, Italian dressing.
  • Miracle rice with Asian stir fry, fresh fruit and coleslaw with zero calorie slaw dressing
  • Southwestern Sloppy Joe with a fruit cup and coleslaw with zero calorie Thousand Island
  • Meatloaf with zoodles
