Lemon Chicken Soup


  • 3.5oz chicken breast, cooked
  • 1.5 cup spinach, chopped
  • 1 cup low-sodium chicken broth
  • 1 cup water
  • Juice of 1 lemon
  • 1 tsp thyme
  • Sea salt to taste
  • Pepper to taste


  1. Preheat saucepan over medium heat.
  2. Combine all ingredients.
  3. Bring to a boil, then simmer 20 mins. Serve.
