Egg White Veggie Scramble – RM3®

Ingredients
- 3 egg whites
- ½ cup spinach, chopped
- ¼ cup bell peppers, diced
- ¼ cup onions, diced
- ¼ cup mushrooms, sliced
- 1 clove garlic, minced
- ½ tsp dried basil or oregano
- Salt and pepper, to taste
- Zero-calorie nonstick cooking spray
Instructions

Spray a pan with zero-calorie nonstick cooking spray and place over medium heat.

Add onions, bell peppers, mushrooms, and garlic. Sauté for 3-4 minutes until soft.

Stir in the spinach and cook for another 1-2 minutes until wilted.

Pour in the egg whites and season with salt, pepper, and herbs. Stir occasionally, cooking until the eggs are fully set.
