Cold Asparagus Salad
- asparagus spears
- 3 tbsp lemon juice
- fresh chopped mint leaves or parsley
- 2 tbsp caper juice
- 1 tbsp finely minced red onion
- salt and pepper, to taste
- Lightly steam the asparagus until tender.
- Marinate in juices and spices for at least 30 minutes and enjoy.
- Variations: Toss with the marinade of your choice for flavor variety.
