Cheeseburger Casserole – GLP Elite™

Ingredients

  

Casserole Ingredients

  • 1.5 lbs ground beef
  • 15 oz. can petite diced tomatoes, drained
  • 2 medium russet potatoes, shredded (about 2 cups)
  • ½ cup shredded cheese
  • ½ large yellow onion, diced
  • Salt and black pepper, to taste

Special Sauce Ingredients

  • ½ cup Walden Farms® Mayo
  • 2 Tbsp sugar-free ketchup
  • 1 Tbsp liquid aminos
  • 1 Tbsp pickle, finely chopped
  • 1 tsp mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions

 

  • Preheat the oven to 350°F.
  • In a medium skillet, cook the ground beef and diced onion over medium heat, seasoning with salt and black pepper to taste. Drain the grease.
  • In the casserole dish, combine the cooked beef mixture, drained tomatoes, and shredded potatoes.
  • Stir in the special sauce and evenly top with shredded cheese.
  • Bake the casserole uncovered at 350°F for 30 minutes, or until the potatoes are tender and the cheese is set and starting to bubble at the edges.
  • Cool the casserole for 10 minutes on the counter before serving.

Notes

Recipe Yields: 24 servings of protein, 8 servings of fat, and 4 servings of complex carbs.
