Blueberry Protein Pancakes
Ingredients:
- 1 RM Thick and Creamy Vanilla Shake* (powder)
- 3/4 cup blueberries
- 1-2 egg whites (as needed)
- Cinnamon (to taste)
- 1/2 tsp water
- Walden Farms Syrup of choice
Directions:
- Mix all ingredients together in a bowl (for the batter).
- Heat a pan on a stove-top on medium heat.
- Spray with non-stick cooking spray, then pour batter onto pan.
- Cook for 2-3 minutes on one side, then flip. Repeat for other side until done.
- Place onto a plate, drizzle with syrup and enjoy!

Blueberry protein pancakes: now, that’s a recipe that’s easy to make, tastes great, and will help you lose weight and keep it off.
I’m Jan D’Atri and this is Clean Eating the Red Mountain Way!
Breakfast is so important — we’ve heard it so many times, and these helpful pancakes are worth waking up to.
Here are your ingredients: (1) protein powder — the Red Mountain vanilla thick and creamy version, or any protein shake that has a mix of 15 grams of protein, 0 to 5 grams of carbs, and 0 to 3 grams of fat, (2) some filtered water, (3) the whites of one large egg, & (4) a little cinnamon, which helps to reduce inflammation and heart disease, and lowers blood sugar, and, of course, (5) fresh blueberries — a favorite superfood because they’re high in vitamin C, they help improve memory, heart disease, and they lower blood pressure. Blueberries are also very high in antioxidants, which means they can protect against the effects of aging. Oh, I like that!
Rinse 3/4 of a cup of blueberries really well and set aside in a bowl. Combine two scoops of protein powder, the egg white, a pinch or two of cinnamon, and enough water to create a thick batter. Then, gently stir in the blueberries. Spray some zero-calorie cooking spray onto a hot skillet and make your pancakes.
I mentioned that a protein-rich breakfast is so important, because protein makes you feel full. So by eating protein in the morning, you’re going to stay fuller longer throughout the day.
Now, with these pancakes you have to be a little bit patient; They take a little bit longer than most pancakes.
Perfect!
