Sheet Pan Chicken Fajitas - RM3®

Ingredients
  

  • 1 lb. boneless chicken breast
  • 2 bell peppers
  • 1 medium red onion
  • ¼ cup green onions, chopped
  • 2 Tbsp lime juice
  • Salt-free taco seasoning, to taste
  • Minced garlic, to taste
  • Zero-calorie nonstick cooking spray

Instructions
 

  • Slice the vegetables and mince the garlic. Combine with the lime juice and 2 Tbsp of taco seasoning in a large mixing bowl.
  • Preheat the oven to 400°F.
  • Season the chicken breast on both sides with the remaining taco seasoning.
  • Heat a large cast-iron skillet over medium-high heat and coat it with zero-calorie nonstick cooking spray.
  • Sear the chicken on both sides until golden brown (the chicken will not be fully cooked).
  • Transfer the seared chicken to the sheet pan with the vegetables.
  • Bake in the preheated oven for 15 minutes or until the chicken is fully cooked and the vegetables are tender.

Recipe Yields: 16 servings of protein and 10 ½ servings of vegetables.
