Cut the stale bread into cubes. Set aside.
Cook the sausage in a large pan over medium heat. When browned, drain off the grease and add the onion, celery, and garlic. Cook for 4-5 minutes until softened.
In a large bowl, combine the bread cubs, sausage mixture, fresh herbs, eggs, and broth.
Spray a 9×13 baking dish with zero-calorie nonstick cooking spray. Transfer the mixture to the dish and spread into a single layer.
Book at 350°F for 45-55 minutes.
