Peel and slice the carrots on the diagonal into even slices about ¼ – ⅜ inch thick. Spray the carrots with zero-calorie nonstick cooking spray and toss with salt, pepper, and thyme.
Spread out carrots in a single layer on a roasting pan. Roast for 15 minutes, until the carrots are browned and tender.
Wash and dry the mushrooms. Cut into even slices, slightly thicker than the carrots. Spray them with zero-calorie nonstick cooking spray.
Add the mushrooms to the roasting pan and roast for 10-15 minutes, until the mushrooms are cooked and all the liquid has evaporated.
Serve with fresh parsley if desired.
