Roasted Carrots & Mushrooms - GLP Elite™

Ingredients
  

  • 1 bundle of carrots
  • 2 cups mushrooms, sliced
  • 1 tsp fresh thyme
  • Salt and pepper, to taste
  • Parsley for garnish (optional)
  • Zero-calorie nonstick cooking spray

Instructions
 

  • Peel and slice the carrots on the diagonal into even slices about ¼ – ⅜ inch thick. Spray the carrots with zero-calorie nonstick cooking spray and toss with salt, pepper, and thyme.
  • Spread out carrots in a single layer on a roasting pan. Roast for 15 minutes, until the carrots are browned and tender.
  • Wash and dry the mushrooms. Cut into even slices, slightly thicker than the carrots. Spray them with zero-calorie nonstick cooking spray.
  • Add the mushrooms to the roasting pan and roast for 10-15 minutes, until the mushrooms are cooked and all the liquid has evaporated.
  • Serve with fresh parsley if desired.
