Italian Beef Cauliflower Skillet - RM3® & GLP Elite™

Ingredients
  

  • 16 oz. lean ground beef
  • 1 bag of frozen cauliflower rice (1 ½ cups)
  • 1 ½ cups tomatoes, diced
  • 2 tsp Italian seasoning
  • 1 tsp garlic, minced
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish
  • Zero-calorie nonstick cooking spray

Instructions
 

  • Spray a skillet with zero-calorie nonstick cooking spray. Add the ground beef and crumble it as it cooks.
  • Add the tomatoes, garlic, Italian seasoning, and salt and pepper to taste. Stir and cook covered for 5 minutes.
  • Prepare the cauliflower rice based on the package instructions.
  • Place the cauliflower rice on the plate and top with the beef mixture. Sprinkle with fresh basil or parsley.

Notes

Recipe Yields: 16 servings of protein and 6 servings of vegetables.
