Preheat the oven to 350°F. Line a sheet pan with parchment paper and set aside.
Heat a pot over medium-high. Add the cauliflower rice (do not add water) and cook until almost tender, 3 to 5 minutes.
Meanwhile, in a food processor or a blender, puree the cottage cheese until smooth.
Add the whipped cottage cheese to the cauliflower rice and season to taste.
Scoop the dough with a small cookie dough scoop or rounded tablespoon of the cauliflower mixture into a tot shape and place onto the prepared baking sheet.
Bake until browned, about 45 minutes.
