Crispy Roasted Blackened Cauliflower with Herbs

Ingredients
  

  • 1 large head of cauliflower, cut into florets (about 8 cups)
  • 1 cup mixed herbs (basil, dill, and cilantro), chopped
  • 1 lemon, cut into wedges
  • 1 clove garlic, grated
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp cayenne pepper
  • Salt and pepper, to taste
  • Zero-calorie nonstick cooking spray

Instructions
 

  • Preheat oven to 425°F.
  • Spray a baking sheet with zero-calorie nonstick cooking spray. Combine the cauliflower and seasoning in a large bowl. Transfer to the baking sheet and roast for 15 minutes, or until tender.
  • Toss the cauliflower and add the lemon wedges. Roast for another 15 minutes, until slightly blackened.
