BBQ Chicken Cauliflower Crust Pizza

Cook Time 35 minutes
Course Dinner, Lunch
Servings 1 person

Ingredients

  • 3 oz. skinless chicken breast, cubed
  • 2 cups cauliflower, riced
  • 2 egg whites
  • ¼ large red onion, thinly sliced (¼ cup)
  • ½ tsp garlic powder
  • ½ tsp basil, chopped or dried
  • ½ tsp oregano
  • Salt and pepper, to taste
  • Walden Farms® Original BBQ Sauce
  • Parchment paper

Instructions

  • Remove the outer leaves of the cauliflower. Separate the florets one by one with a paring knife.
  • Place cauliflower in a food processor and pulse until it has a “rice” texture.
  • Add cauliflower to a bowl and microwave for 7-8 minutes to steam and soften. Then, let cool.
  • Spoon cauliflower into cheesecloth or towel. Fold, twist, and squeeze out all of the liquid.
  • In a bowl, add the cauliflower, egg whites, garlic powder, basil, oregano, and a pinch of salt and pepper. Mix the ingredients to combine.
  • Line a pan with parchment paper. Form a 9-inch pizza crust about ¼-inch thick.
  • Place the pizza crust in a pre-heated 450°F oven, and bake for 15 minutes or until golden brown.
  • Cube chicken breast and season with salt and pepper. Grill until done.
  • Spread BBQ sauce over the cauliflower crust, leaving a slight border. Spread the cooked chicken over the top. Place pizza under the broiler for 1-2 minutes.
