Zucchini Boats

Ingredients:

  • 4 medium zucchini
  • 1 lb. ground turkey
  • 1 tsp. salt & pepper
  • 1 tsp. garlic
  • 1 sweet yellow onion
  • 1 cup mushrooms
  • 2 cups fresh spinach
  • 3 cups tomato sauce

Directions:

  1. Slice the zucchini lengthwise and then scoop out the center. You can add the scooped-out zucchini to the filling mixture.
  2. Then place the zucchini boats on a foil lined baking sheet
  3. For the filling, in a large skillet, coat with zero-calorie cooking spray.
  4. Add one sweet yellow onion that you’ve chopped fine, and one cup of sliced mushrooms. You can add a small amount of water and then sauté until soften.
  5. Next, add your spinach about two cups and mix well. Then add one pound of that season ground turkey and cook until done.
  6. Now here’s where you can add the scoop out zucchini centers. Give it a good stir and then mix in three cups of Red Mountain-approved tomato sauce. If you want a bit of a kick, a pinch of red pepper flakes will do the trick. And that’s it for the filling.
  7. Cook it for about five minutes and then scoop that filling into the zucchini boats.
  8. Once the boats are filled, place them in a 400-degree oven and cook for about 25 minutes. Enjoy!

What a delicious, nutritious and fun way to enjoy fresh veggies in ground turkey. These zucchini boats are filling and full of flavor. Hi, it’s Jan D’Atri, and this is clean eating the Red Mountain Way.

There’s a lot of goodness packed into this healthful meal. Zucchini loaded up with a tasty feeling that is so satisfying. Here’s what you’ll need. Zucchini is super high in antioxidants and they also help promote healthy digestion. Lean ground turkey, of course, is a great source of protein, and you’ll season it with a teaspoon each of salt, pepper and garlic powder. Then sweet yellow onion, mushrooms, and fresh spinach. And finally, some Red Mountain-approved tomato sauce. Slice the zucchini lengthwise and then scoop out the center. You can add the scooped-out zucchini to the filling mixture.
