Superfood Skillet

Ingredients:

  • 16 oz. lean ground turkey
  • 4 cups crushed tomatoes
  • 4 egg whites
  • 1 bulb fennel, sliced thin
  • ½ sweet yellow onion, sliced thin
  • 2 garlic cloves, minced
  • 1 jalapeño
  • ¼ cup fresh parsley
  • 1 Tbsp capers
  • 1 tsp smoked paprika
  • ½ tsp red pepper flakes
  • ½ tsp salt and pepper
  • Zero-calorie nonstick cooking spray

Directions:

  1. Spray a cast-iron skillet or large pan with zero-calorie nonstick cooking spray.
  2. Add sweet yellow onions and fennel. Sauté until caramelized
  3. Add ground turkey and cook until brown. Season with paprika, minced garlic, and red pepper flakes.
  4. Add crushed tomatoes and simmer for 10 minutes. Then, mix in capers, parsley, salt, and pepper.
  5. With the dish nearly cooked, make four wells in the mixture. Pour one egg white into each well.
  6. Preheat oven to 300°F. Cook until egg whites are as you like them.
  7. Top with slices of jalapeño and a pinch of parsley.

Grapefruit Seltzer Spritzer

Ingredients:

  • 1 grapefruit
  • 1 bottle of seltzer water
  • Ginger shavings
  • 1 sprig of rosemary or mint (to garnish)

Directions:

Pour ice into a glass, and grate a tiny bit of fresh ginger. Next, squeeze a pink grapefruit into the glass. Top it off with seltzer water, and garnish with fresh mint or rosemary.

It’s a delicious one-skillet wonder, that’s nutritious, filling, and fun, with a tasty sauce, and egg whites nestled inside. We’ll serve it, with a refreshing Grapefruit Seltzer Spritzer. See, dieting can be delicious!

Hi it’s Jan D’Atri and this is clean eating, the Red Mountain Way.

Here’s what you’ll need for the Superfood Skillet meal: One pound of lean ground turkey, half of a sweet yellow onion, sliced thin. Here’s a twist that’ll add natural sweetness, one bulb fennel, sliced thin. Another surprising ingredient, capers! Lots of fresh parsley, a large can of crushed tomatoes, some jalapeno, smoked paprika, minced garlic, and red pepper flakes. Four egg whites, and a little salt and pepper. So, let’s make this dish happen!

Spray a cast-iron skillet or large pan with zero-calorie cooking spray. Heat the pan, and add the sweet yellow onions and the sliced fennel. Sauté until caramelized. Then grab the ground turkey, which of course, is a mainstay for a healthy diet, as it’s high in protein, and low in saturated fat and cholesterol. You’ll cook the turkey until it browns. To season, we’ll add paprika, two large minced garlic cloves, and about a half a teaspoon of red pepper flakes.

Paprika is rich in antioxidants, vitamins, and minerals. Garlic helps kill viruses, bacteria and other toxins in the body. And red pepper flakes are a great metabolism booster!

Now you’ll add one 28-oz can of crushed tomatoes. Simmer for about 10-minutes. This is one of those skillet meals that are so hearty and helpful. Tomatoes are a great source of Vitamin C, and contain the anti-oxidant lycopene, it’s great for heart health. Next, add in a tablespoon of capers and quarter cup of parsley. Capers are loaded with vitamins and are low in calories, and high in fiber – perfect for weight loss. Parsley helps with blood sugar and boosting your immune system. This meal is shaping up to be a Superfood Skillet!

Finally, add a little salt and pepper. Then, make four wells in the mixture. Pour one large egg white into each well. Now it goes into the oven at 300 degrees, until the egg whites are done just the way you like them. And the finishing touches? Slices of one jalapeno, and a little more parsley. Here is your Superfood Skillet, ready to dive into!

For the perfect beverage for this meal, a Grapefruit Seltzer Spritzer! Pour some ice into your glass, and grate a tiny bit of fresh ginger. Ginger is known to be one of the healthiest spices on the planet. Next, squeeze a pink grapefruit into the glass. Top it off with seltzer water, and garnish with fresh mint or rosemary.
