Spinach Salad with Salmon Filets

Ingredients

  • Zero-calorie non-stick cooking spray
  • 1 cup of fresh spinach, chopped
  • 1 red onion, sliced thin
  • 2 3.5oz salmon filets
  • 2 lemons, juiced
  • 2 egg whites, hard boiled
  • ¼ teaspoon of salt
  • ⅛ teaspoon of pepper
  • Walden Farms® French Dressing

Directions

  1. Heat oven to 400°F. Spray zero-calorie non-stick cooking spray on pan. Take the lemon juice and disperse over the filets; season with salt and pepper. Bake for 15-20 minutes.
  2. Place your spinach in a large bowl. Top spinach with sliced red onion, hard boiled egg whites, and salmon filets. Drizzle with Walden Farms® French Dressing. Enjoy!

Hi, I’m Jan D’Atri, and this is clean eating the Red Mountain way. Our love for salmon drives us to find new ways to make it and this one couldn’t be easier. Here’s what you’ll need for this spinach salad with salmon filets. Two fresh salmon filets about four ounces each, two lemons, and one red onion, some fresh baby spinach about one cup per serving a little pepper and salt, and it tastes zero calorie salad dressing from Walden Farms like Italian or French. Place your salmon filets on a baking sheet sprayed with zero calorie cooking spray. Pour the juice from two lemons over the salmon and brush to thoroughly coat then sprinkle with a little pepper and salt. Bake at 400 degrees for about 15 minutes and air fryer toaster oven works really well to next cut the onion in very thin slices. Red Onions not only add a flavorful kick to your salad, but onions have antioxidants that help fight inflammation and boost your immune system. That’s a bonus. And of course, we all know that spinach is a superfood that helps your heart, immune system and skin. Lay a bit of spinach over a platter. Then sprinkle the spinach with some sliced red onion.
