Cauliflower Stuffing

Ingredients

  • Zero calorie non-stick cooking spray
  • 1/4 cup of onion, chopped
  • 1/2 celery stalk, chopped or thinly sliced
  • 1/4 cup of cauliflower, chopped
  • 1/4 cup of baby bella mushrooms, chopped
  • Pinch of kosher salt
  • Pinch of ground black pepper
  • 1 teaspoon of freshly chopped parsley
  • 1 teaspoon of freshly chopped rosemary
  • 1/2 teaspoon of freshly chopped sage (or ground sage)
  • 1/4 cup of low-sodium vegetable or chicken broth

Directions

  1. In a skillet over medium heat, add zero calorie non-stick cooking spray. Then, add onion and celery and sauté until soft, for 4 to 5 minutes.
  2. Add in cauliflower and mushrooms and season with a pinch of salt and pepper. Cook until tender, for about 7 to 8 more minutes.
  3. Add parsley, rosemary, and sage and stir.
  4. Lastly, pour over broth of your choice, and cook until liquid is absorbed, for no more than 10 minutes.

 

Hearty Garlic Greens

Ingredients

  • 1/2 cup hearty greens (kale, chard), stems removed, and sliced into 2-inch strips
  • Zero calorie non-stick cooking spray
  • 1 clove of garlic, sliced thin
  • 1/4 cup of spinach
  • Pinch of red pepper flakes

Directions

  1. Bring a pot of water to a boil. Add hearty greens into water and blanch for 2 minutes. Immediately, place blanched greens into a bowl of ice-cold water.
  2. Drain the greens, squeeze dry, and set aside. Heat zero calorie non-stick cooking spray and garlic in a skillet over medium-low heat.
  3. Cook until the garlic is golden, 4-5 minutes. With a slotted spoon, remove garlic from skillet and set aside for later.
  4. Increase heat to high. Add in hearty greens and cook for an additional 3 minutes.
  5. Add in spinach and season with salt and red pepper flakes to taste. Continue to cook until spinach wilts, stirring frequently.
  6. Return garlic to skillet and stir.

Turkey Cutlets with Rosemary and Thyme

Ingredients

  • 4oz turkey cutlet
  • Zero calorie non-stick cooking spray
  • Pinch of salt
  • Pinch of ground black pepper
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of dried thyme

Directions

  1. Rinse the turkey cutlet and pat dry with a paper towel. Season the top of the cutlet with a pinch of salt and ground black pepper, and half of the rosemary and thyme.
  2. Heat the zero calorie non-stick cooking spray in a skillet with a lid over medium heat. Once heated, place the turkey cutlet into the pan, seasoned side down.
  3. Season the other side of the turkey cutlet with a pinch of salt and ground black pepper, and the remaining rosemary and thyme, and cover with a lid.
  4. Cook on the first side for about 5-6 minutes, or until golden-brown.
  5. Flip, re-cover, and cook an additional 3-4 minutes, or until the turkey is cooked through.

Easy Stovetop Sautéed Cinnamon Apples

Ingredients

  • 1 cup chopped apples
  • 1 tablespoon of water
  • Zero calorie non-stick cooking spray
  • 1 tablespoon of Walden Farms Maple Walnut Syrup
  • A pinch of ground cinnamon
  • A pinch of sea salt

Directions

  1. Cut apple into about 1/2 inch to 1 inch cubes. Place apple pieces into a skillet with a tablespoon of water.
  2. Cover the pan and cook on medium heat for about 4-5 minutes, stirring occasionally, until the apple pieces soften and water is absorbed.
  3. Add zero calorie non-stick cooking spray to the skillet. Stir apple pieces and oil together. Cook for 4-5 minutes, stirring every minute or so, until the apples become soft.
  4. Add Walden Farms® Maple Walnut Syrup, a pinch of cinnamon and salt, and stir.
  5. Cook for about 5 more minutes, stirring every minute until the apples reach your desired softness.
