Meatball Soup
Ingredients:
Soup
- 5 cups of chicken broth
- 4 tomatoes, minced
- 5 zucchini, chopped
- 1 onion, chopped
- 3 stalks celery, chopped
- 1/2 cup cilantro
- 2 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp oregano
Meatballs
- 16 oz ground beef (96% fat free)
- 2 egg whites
- 2 garlic cloves
- 1/4 cup cilantro, chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp cumin
Directions:
- Start by making meatballs. Mix all meatball ingredients in a bowl and make sure spices are evenly mixed with the ground beef.
- Then, mash together 1-inch meatballs and set aside in the fridge.
- In a large stock pan, combine chicken broth, onion, tomatoes, celery, and soup spices. Once ingredients come to a boil, lower heat and simmer for 10 – 15 mins.
- Add meatballs in the soup and stir slowly for 1 minute. Cover the stock pan and let simmer for another 15 mins.
- Add zucchini and cilantro, simmer for another 10 minutes.
