Egg White Veggie Scramble – RM3®

Ingredients

  

  • 3 egg whites
  • ½ cup spinach, chopped
  • ¼ cup bell peppers, diced
  • ¼ cup onions, diced
  • ¼ cup mushrooms, sliced
  • 1 clove garlic, minced
  • ½ tsp dried basil or oregano
  • Salt and pepper, to taste
  • Zero-calorie nonstick cooking spray

Instructions

 

  • Spray a pan with zero-calorie nonstick cooking spray and place over medium heat.
  • Add onions, bell peppers, mushrooms, and garlic. Sauté for 3-4 minutes until soft.
  • Stir in the spinach and cook for another 1-2 minutes until wilted.
  • Pour in the egg whites and season with salt, pepper, and herbs. Stir occasionally, cooking until the eggs are fully set.

Notes

Recipe Yields: 1 serving of protein and 1 serving of vegetables.
